Pasta with Zucchini
Serves 4-6
12 oz. Al Dente Pasta
2 lbs. zucchini, cut into 1/8 inch slices
1 cup freshly grated Parmesan
1 cup onion, finely chopped
2 Tbsp. unsalted butter
2 Tbsp. olive oil
salt and pepper to taste
In a large skillet cook onion in butter and oil over moderately low heat, stirring until pale golden. Add zucchini and cook over medium-high heat stirring, until wilted and tender. In the meantime, cook pasta in boiling, salted water until done. Toss with zucchini. Serve with Parmesan and chopped parsley.
